Drizzle hot sauce and sour cream
or serve on the side
Instructions
Toss the cooked, riced cauliflower with the oil, salt, pepper, chili powder and cumin.
Add sautéed onion and bell pepper to cauliflower rice.
In a deep bowl, layer the cauliflower rice, roasted sweet potatoes, black beans and chicken.
Garnish with cilantro and scallions.
Serve with hot sauce and sour cream.
