Instructions
Preheat oven to 350°F.
Coat mini muffin tins with cooking spray.
Press wonton wrappers gently into muffin tins and spray lightly with cooking spray.
Place tins in oven and bake until wontons are crispy, bubbling, and lightly browned, about 5-6 minutes.
Remove from oven and let cool for 5 minutes before turning out onto a cooling rack.
In a medium mixing bowl, combine cream cheese, sour cream, hot sauce, and garlic powder.
Stir in diced chicken and cheeses. Stir until combined.
Spoon or pipe buffalo chicken mixture into wonton cups.
Top cups with crumbled bleu cheese.
Bake at 350°F for 8-10 minutes until mixture is hot and bleu cheese is melted.
Garnish with sliced scallions, if desired.
