Sprinkle cabbage with salt and coat. Squeeze to remove extra water and rinse off salt.
Mix filling ingredients together in a large bowl.
Wet edge of wonton wrapper. Place filling in center. Fold in half and make pleats to seal the top of each wrapper.
Add vegetable oil to sauté pan over medium heat. Add a single layer of potstickers to the pan and sear bottoms. Once seared, flip and add ¼ cup water to pan and cover immediately to steam until fully cooked, around 5 minutes. Remove the lid and let water evaporate before transferring potstickers out and repeating process.
Serve with soy sauce and sweet chili sauce on side.
