Add cooked chicken to food processor and pulse until coarsely ground.
In skillet, heat ghee over medium heat. Add onion and cook until just beginning to soften, 3-5 minutes. Add ginger and garlic pastes. Cook for 1 minute.
Add ground chicken and cook for 2-3 minutes, until warmed through.
Add all dry spices to skillet and mix until thoroughly combined. Cook for an additional minute to toast spices.
Remove from heat and add cilantro.
Cool mixture to room temperature (or refrigerate) until ready to make samosas.
