In a large skillet over medium heat, heat 1 Tbsp of the olive oil. Add the chicken, stirring occasionally until heated through. Remove and set aside.
Heat the remaining olive oil and add the onions and mushrooms. Cook until softened, about 5 minutes. Add garlic and cook for an additional minute.
Add cherry tomatoes and Italian seasoning. Cook until tomatoes begin to soften, about 4 minutes.
Stir in the tomato paste and cook for 30 seconds. Stir in the broth, heavy cream, and tomato sauce. Bring to a simmer and let simmer for about 5 minutes.
Add cream cheese and Parmesan cheese and heat until melted.
Add spinach and cook until wilted and bright green, about 2 minutes.
Add chicken and pasta back to the skillet and toss before serving. Top with additional Parmesan cheese.
