Whisk together Hot Honey Dijon Mustard ingredients, adding seasoning as needed.
Prepare chicken according to directions.
Melt butter in a skillet over medium heat. Add brussels sprouts, sweet potatoes, and yellow onion. Cook until onions begin to soften.
Add apples, honey, thyme, rosemary, garlic powder, and salt. Cook for another 1-2 minutes before adding broth.
Continue to cook and stir until broth is evaporated. Check to see if vegetables are tender enough. Add additional broth and continue to cook, if needed.
Layer vegetable mixture in a small skillet and top with chicken. Serve with hot honey dijon mustard on top or on the side.
