Lemongrass Vinaigrette Ingredients:

Instructions
Add all vinaigrette ingredients into food processor and pulse until smooth. Taste and adjust seasonings as necessary. Set aside for later.
Mix romaine lettuce, red bell pepper, carrots, and red cabbage together. Set aside.
Cook rice according to directions on packaging.
Cook chicken according to directions on packaging.
Layer rice in a bowl. Top with sliced chicken and lettuce mix.
Serve vinaigrette on the side or drizzle over top. Garnish with cilantro and lime wedges.
