Add all pesto ingredients except for olive oil into a food processor and blitz until chopped. With the food processor running, slowly add olive oil until the mixture comes together and is the desired consistency. Taste and adjust seasoning as necessary.
Prepare pasta according to directions on packaging. Reserve 1 cup of pasta water before draining.
Add the desired amount of pesto and toss with pasta. Mix in 2-3 tablespoons of pasta water and stir. Continue the process until the desired consistency is reached.
Cook chicken according to instructions on packaging. For diced chicken, toss with pasta and serve. For breaded chicken, slice and serve on top.
