In a separate mixing bowl, combine muffin mix, cake mix, eggs, milk, and water. Stir until combined, but do not overmix.
Spray jumbo muffin tin with cooking spray. Fill each muffin cup with batter until ¼ full. Add ~1/2 cup of sauced chicken to each cup. Top with remaining batter until cups are ¾ full.
If desired, top with a few slices of candied jalapeno.
Bake 15-20 minutes, until golden brown and a toothpick inserted into muffins comes out clean.
