
Mediterranean Farro Bowl with Chicken

Ingredients
- 1 lb Sliced Chicken
- 2 cups Cooked farro
- 2 cups Baby spinach
- 1 cup Shirazi salad recipe below
- ½ cup Canned chickpeas drained
- ½ cup Crumbled Feta
Tomato-Cucumber (Shirazi) Salad
- 3 Roma tomatoes small diced
- 4 Persian cucumbers small diced
- ½ Red onion or 1 large shallot diced
- ½ cup Diced red or yellow bell pepper optional
- 3 Tbsp Extra virgin olive oil
- ¼ cup Fresh lemon juice
- 2 Tbsp fresh mint chopped
- 2 Tbsp fresh dill chopped
- 2 Tbsp fresh parsley chopped
- Salt and pepper to taste
Instructions
- Place a bed of baby spinach in 4 plates or bowls.
- Top with cooked farro, Shirazi salad, sliced chicken, and chickpeas.
- Garnish with crumbled feta and additional herbs, if desired.
