
Beer Cheese Chicken Queso Dip

Ingredients
- 2 cups Diced Chicken Breast
- 1 Tbsp Butter
- ½ Medium onion diced
- 1 Jalapeno pepper seeded and diced
- 2 cloves Garlic minced
- 1 tsp Cumin ground
- 10 oz Diced tomatoes and green chilies drained
- 2 oz Cream cheese softened
- 1 cup Whole milk
- ½ cup Beer
- 12 oz Sharp cheddar shredded
- 12 oz Monterey jack shredded
- 2 Tbsp All-purpose flour
- 2 tsp Chipotle chili pepper ground
Instructions
- In a large skillet, melt butter over medium heat. Add chicken and sauté for 2-3 minutes. Add onion, jalapeno, garlic, and cumin. Sauté until vegetables are tender, another ~5 minutes. Add diced tomatoes & chilies.
- Add cream cheese and milk. Cook until smooth. Add beer.
- In a separate bowl, toss together Cheddar and Monterey Jack cheese with the flour. Slowly add in the cheese & flour mixture into the melted cream cheese mixture.
- Finish with chipotle powder.
