Ingredients

  • 2 cups Diced Chicken Breast
  • 1 Tbsp Butter
  • ½ Medium onion diced
  • 1 Jalapeno pepper seeded and diced
  • 2 cloves Garlic minced
  • 1 tsp Cumin ground
  • 10 oz Diced tomatoes and green chilies drained
  • 2 oz Cream cheese softened
  • 1 cup Whole milk
  • ½ cup Beer
  • 12 oz Sharp cheddar shredded
  • 12 oz Monterey jack shredded
  • 2 Tbsp All-purpose flour
  • 2 tsp Chipotle chili pepper ground

Instructions

  • In a large skillet, melt butter over medium heat. Add chicken and sauté for 2-3 minutes. Add onion, jalapeno, garlic, and cumin. Sauté until vegetables are tender, another ~5 minutes. Add diced tomatoes & chilies.
  • Add cream cheese and milk. Cook until smooth. Add beer.
  • In a separate bowl, toss together Cheddar and Monterey Jack cheese with the flour. Slowly add in the cheese & flour mixture into the melted cream cheese mixture.
  • Finish with chipotle powder.
