Ingredients

  • 16-20 oz Diced Chicken Breast
  • ½ cup Greek yogurt
  • ¼ cup Mango chutney
  • 2 Tbsp Black currants
  • 1 Scallion minced
  • ¼ cup Pistachios roughly chopped
  • 2 Tbsp Curry powder

Instructions

  • Mix yogurt, mango chutney, black currants, scallion, pistachios, and curry powder in a medium bowl. Stir until completely blended.
  • Fold chicken into dressing until coated.
  • Garnish with additional chopped scallion and crushed pistachios if desired.
