African Chicken and Couscous Bowl

Ingredients

  • ½ cup Diced Chicken Breast
  • ½ cup couscous cooked ¼ cup golden raisins
  • ½ Tbsp oil
  • ¼ cup orange juice concentrate thawed and undiluted
  • 2 Tbsp lemon juice
  • ½ Tbsp water
  • ½ Tbsp olive oil
  • ½ tsp. ground cumin
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ cup cucumber chopped
  • ¼ cup red bell pepper chopped
  • ¼ cup green onion thinly sliced
  • ¼ cup fresh cilantro chopped

Instructions

  • Heat cooked couscous in a pan and add golden raisins.
  • Heat oil in skillet and cook chicken per specifications.
  • Combine orange juice, lemon juice, water, olive oil, cumin, salt and pepper. Stir well.
  • Combine couscous mixture, juice mixture, chicken, cucumber and red bell pepper in a bowl.
  • Garnish with green onions and cilantro.
