
Avocado Mango Chicken Salad

Ingredients
- 2 cups Fajita Diced Chicken
- 2 Ripe avocados peeled, seeded, and ½” diced
- 2 Tbsp Lime juice
- 1 Tbsp Avocado or olive oil
- 1 clove Garlic minced
- ¼ cup Cilantro chopped
- 2 Tbsp Candied jalapenos chopped
- ¼ cup Red onion small dice
- 1 Ripe mango peeled, seeded and ¼” diced
Instructions
- In mixing bowl, add about a quarter of the diced avocado and mash with a fork until smooth. Add lime juice, oil, garlic, cilantro, and candied jalapenos. Stir until smooth.
- Add diced chicken, avocado, red onion, and mango. Mix until combined.
- Use chicken salad on lettuce leaves, in wraps, or on sandwiches.
