
Chicken Protein Bowl

Ingredients
- 1 cup Leafy green mix
- ½ cup Brown rice
- ⅛ cup Pickled red onions
- ½ cup Flame seared chicken 5259
- ⅛ cup Original hummus or a 2-3 oz scoop
- ⅛ cup Red pepper hummus or a 2-3 oz scoop
- ⅛ cup Feta Cheese crumbled
- ⅛ cup English Cucumber quartered
- ⅛ cup Cherry tomatoes sliced
- ⅛ cup Crispy chickpeas
- Lemon vinaigrette
- 3 Tbsp Lemon juice fresh
- 1 clove Garlic Minced
- 1 Tbsp Dijon mustard
- Salt and pepper to taste
- ½ tsp Honey
- ¼ cup Olive oil
- ½ tsp Dried oregano
- 3 Tbsp Red wine vinegar
- ¼ cup Tahini
- 1 cup Tzatziki
Instructions
- Cook chicken according to directions.
- Whisk together tahini and tzatziki to make sauce. Taste and adjust as necessary.
- Layer all ingredients in bowl, topping with scoops of hummus, tahini tzatziki, and crispy chickpeas.
- To make vinaigrette, whisk together all ingredients except for olive oil. Slowly add olive oil while whisking until the dressing is emulsified. Taste and adjust seasoning as desired.
