
Chimichurri Chicken

Ingredients
- 6 Grilled chicken filets, halved lengthwise
- 12 Wooden skewers
- Prepared chimichurri sauce recipe below
Chimichurri
- ½ cup Parsley finely chopped
- 2 Tbsp Fresh oregano finely chopped
- 4 cloves Garlic minced
- ¼ cup Shallot minced
- 1 tsp Dried red chili flake
- 2 Tbsp Red wine vinegar
- 1 Tbsp Fresh lemon juice
- ½ cup Extra virgin olive oil
- Salt and pepper to taste
Instructions
- Method:
- Thread halved chicken breasts onto skewers.
- Grill over low heat until internal temperature reaches 165°F.
- Top with prepared chimichurri sauce or serve the sauce on the side for dipping.
Chimichurri Instructions:
- Combine all ingredients in a mixing bowl and mix well. This can be prepared up to 24 hours in advance.
