Ingredients

  • 6 Grilled chicken filets, halved lengthwise
  • 12 Wooden skewers
  • Prepared chimichurri sauce recipe below

Chimichurri

  • ½ cup Parsley finely chopped
  • 2 Tbsp Fresh oregano finely chopped
  • 4 cloves Garlic minced
  • ¼ cup Shallot minced
  • 1 tsp Dried red chili flake
  • 2 Tbsp Red wine vinegar
  • 1 Tbsp Fresh lemon juice
  • ½ cup Extra virgin olive oil
  • Salt and pepper to taste

Instructions

  • Method:
  • Thread halved chicken breasts onto skewers.
  • Grill over low heat until internal temperature reaches 165°F.
  • Top with prepared chimichurri sauce or serve the sauce on the side for dipping.

Chimichurri Instructions:

  • Combine all ingredients in a mixing bowl and mix well. This can be prepared up to 24 hours in advance.
