
Citrus Tender Tacos

Ingredients
- 4 Chicken tenders
- 4 Tortilla shells
- ½ cup Roasted corn
- ½ cup Pickled red onion
- 3 Tbsp Cotija cheese
- 3 tsp Cilantro
- Achiote citrus sauce (recipe below)
Achiote Citrus Sauce Ingredients:
- 3 oz Achiote paste
- Juice from 2 oranges
- Juice from 1 lime
- 1 Jalapeno pepper seeded
- 3 cloves Garlic
- ½ tsp Oregano
- ½ tsp Cumin
- ½ tsp Smoked paprika
- Pinch of salt and pepper
Instructions
- Cook chicken according to directions.
- Warm the tortilla.
- Spread a layer of sauce on the inside of tortilla. Top with remaining ingredients.
Sauce Instructions:
- Blend until smooth.
