Cold Peanut Sesame Noodles

Ingredients

  • 1 lb cooked noodles ramen, udon, soba, etc.
  • 8 oz Brakebush 5254 Grilled Diced Breast & Thigh
  • 2 tbs sesame oil plus a splash
  • 3 tbs soy sauce
  • 2 tbs Chinese rice vinegar
  • 2 tbs tahini
  • 2 tbs smooth peanut butter
  • 1 tbs granulated sugar
  • 1 tbs finely grated ginger
  • 2 tsp minced garlic
  • 2 tsp chili-garlic paste or sambal oelek
  • ¼ cup chopped roasted peanuts

Instructions

  • In mixing bowl, toss cooked noodles with a splash of sesame oil. Set aside.
  • In a medium bowl, whisk together the remaining 2 tablespoons sesame oil, the soy sauce, rice vinegar, sesame paste, peanut butter, sugar, ginger, garlic and chili-garlic paste.
  • Pour the sauce over the noodles and toss. Transfer to a serving bowl, and garnish with peanuts.
