Ingredients

  • 4 oz Chicken breast strips
  • 4 oz Mixed salad greens
  • 1 Tbsp Sliced green onions
  • ¼ cup Diced cucumbers
  • ¼ cup Green Goddess Dressing recipe below
  • Chopped parsley to garnish
  • Optional: diced avocado, chopped pistachios, chopped cilantro, shredded brussels sprouts, shredded green cabbage

Dressing Recipe

  • 1 cup Plain Greek yogurt
  • 1 cup Lightly packed cilantro parsley, dill, basil, and/or mint
  • ¼ cup Chives or scallions chopped
  • 1 Medium clove garlic roughly chopped
  • ½ tsp Fine sea salt
  • Freshly ground black pepper to taste

Instructions

  • Cook chicken per specifications.
  • In a large bowl, combine chicken, salad greens, green onions, cucumbers, and other optional ingredients.
  • With a food processor, combine all dressing ingredients. Process until smooth and green, with tiny flecks of herbs. Taste and add more salt or pepper if desired.
  • Drizzle dressing over salad.
