
Green Goddess Salad

Ingredients
- 4 oz Chicken breast strips
- 4 oz Mixed salad greens
- 1 Tbsp Sliced green onions
- ¼ cup Diced cucumbers
- ¼ cup Green Goddess Dressing recipe below
- Chopped parsley to garnish
- Optional: diced avocado, chopped pistachios, chopped cilantro, shredded brussels sprouts, shredded green cabbage
Dressing Recipe
- 1 cup Plain Greek yogurt
- 1 cup Lightly packed cilantro parsley, dill, basil, and/or mint
- ¼ cup Chives or scallions chopped
- 1 Medium clove garlic roughly chopped
- ½ tsp Fine sea salt
- Freshly ground black pepper to taste
Instructions
- Cook chicken per specifications.
- In a large bowl, combine chicken, salad greens, green onions, cucumbers, and other optional ingredients.
- With a food processor, combine all dressing ingredients. Process until smooth and green, with tiny flecks of herbs. Taste and add more salt or pepper if desired.
- Drizzle dressing over salad.
