Ingredients

  • 1 lb Sliced Chicken
  • 2 cups Cooked farro
  • 2 cups Baby spinach
  • 1 cup Shirazi salad recipe below
  • ½ cup Canned chickpeas drained
  • ½ cup Crumbled Feta

Tomato-Cucumber (Shirazi) Salad

  • 3 Roma tomatoes small diced
  • 4 Persian cucumbers small diced
  • ½ Red onion or 1 large shallot diced
  • ½ cup Diced red or yellow bell pepper optional
  • 3 Tbsp Extra virgin olive oil
  • ¼ cup Fresh lemon juice
  • 2 Tbsp fresh mint chopped
  • 2 Tbsp fresh dill chopped
  • 2 Tbsp fresh parsley chopped
  • Salt and pepper to taste

Instructions

  • Place a bed of baby spinach in 4 plates or bowls.
  • Top with cooked farro, Shirazi salad, sliced chicken, and chickpeas.
  • Garnish with crumbled feta and additional herbs, if desired.
