Wings with Melon, Chorizo, and Artichoke

Ingredients

  • 2 lbs Unbreaded Chicken Wings
  • 3 cups Cantaloupe cut melon medium dice
  • 1 cup Artichoke hearts
  • ½ cup Arugula
  • ½ cup Cherry tomato halved
  • cup Chorizo diced
  • 2 Tbsp Clover honey
  • 2 Tbsp Lemon juice +zest
  • 1 Tbsp Basil leaves chop fine
  • 1 Tbsp Extra virgin olive oil
  • Sea salt and crushed red pepper flakes to taste

Instructions

  • Heat chicken wings to specifications.
  • In a large bowl combine the melon, artichoke, chorizo, tomato, arugula, lemon, honey and olive oil with the sea salt and crushed red pepper to taste.
  • Toss in the basil and place salad down on the base of a platter.
  • Take juice left from salad and toss hot wings. Place atop of salad.
