
Wings with Melon, Chorizo, and Artichoke

Ingredients
- 2 lbs Unbreaded Chicken Wings
- 3 cups Cantaloupe cut melon medium dice
- 1 cup Artichoke hearts
- ½ cup Arugula
- ½ cup Cherry tomato halved
- ⅓ cup Chorizo diced
- 2 Tbsp Clover honey
- 2 Tbsp Lemon juice +zest
- 1 Tbsp Basil leaves chop fine
- 1 Tbsp Extra virgin olive oil
- Sea salt and crushed red pepper flakes to taste
Instructions
- Heat chicken wings to specifications.
- In a large bowl combine the melon, artichoke, chorizo, tomato, arugula, lemon, honey and olive oil with the sea salt and crushed red pepper to taste.
- Toss in the basil and place salad down on the base of a platter.
- Take juice left from salad and toss hot wings. Place atop of salad.
