Combine tomato, red onion, garlic, half of the fresh basil, half of the balsamic vinegar, salt, pepper andParmesan cheese in a bowl. Stir together and place in refrigerator until ready to serve.
Combine half of the olive oil, remaining balsamic vinegar, salt, pepper, garlic, andremaining basil.
Heat chicken per specifications.
While the chicken is heating, add olive oil to skillet. Add zucchini noodles and sauté 3-5 minutes.
Place zucchini in bowl. Slice chicken and place on zucchini noodles. Top with bruschetta.
