Ingredients

  • 1 Chicken Fillet
  • 1 Roma tomato chopped
  • ¼ cup Red onion chopped
  • 2 cloves Garlic minced (divided)
  • 3 Tbsp Fresh basil chopped (divided)
  • 1 ½ Tbsp Balsamic vinegar divided
  • Salt and pepper
  • ½ Tbsp Parmesan cheese grated
  • 1 ½ Tbsp Extra virgin olive oil divided
  • 1 Large zucchini spiralized

Instructions

  • Combine tomato, red onion, garlic, half of the fresh basil, half of the balsamic vinegar, salt, pepper andParmesan cheese in a bowl. Stir together and place in refrigerator until ready to serve.
  • Combine half of the olive oil, remaining balsamic vinegar, salt, pepper, garlic, andremaining basil.
  • Heat chicken per specifications.
  • While the chicken is heating, add olive oil to skillet. Add zucchini noodles and sauté 3-5 minutes.
  • Place zucchini in bowl. Slice chicken and place on zucchini noodles. Top with bruschetta.
