Ingredients
- 1 Chicken Fillet
- 1 Roma tomato chopped
- ¼ cup Red onion chopped
- 2 cloves Garlic minced (divided)
- 3 Tbsp Fresh basil chopped (divided)
- 1 ½ Tbsp Balsamic vinegar divided
- Salt and pepper
- ½ Tbsp Parmesan cheese grated
- 1 ½ Tbsp Extra virgin olive oil divided
- 1 Large zucchini spiralized
Instructions
- Combine tomato, red onion, garlic, half of the fresh basil, half of the balsamic vinegar, salt, pepper andParmesan cheese in a bowl. Stir together and place in refrigerator until ready to serve.
- Combine half of the olive oil, remaining balsamic vinegar, salt, pepper, garlic, andremaining basil.
- Heat chicken per specifications.
- While the chicken is heating, add olive oil to skillet. Add zucchini noodles and sauté 3-5 minutes.
- Place zucchini in bowl. Slice chicken and place on zucchini noodles. Top with bruschetta.
