
Chicken Shawarma Farro Bowl

Ingredients
- 1 cup Sliced chicken
- 1 cup Farro cooked
- ¼ cup Kalamata olives drained and halved
- ¼ cup Cherry tomatoes halved
- ¼ cup English cucumber seeded and chopped
- ¼ cup Small red onion thinly sliced
- ¼ cup Hummus
Shawarma Seasoning
- 2 Tbsp Ground cumin
- 2 tsp Smoked paprika
- 1½ tsp Ground turmeric
- 1 tsp Coriander
- 1 tsp Garlic powder
- ½ tsp Cinnamon
- ½ tsp Ground ginger
- ⅛ tsp Cayenne pepper
Dressing
- 2 Tbsp Lemon juice
- 1 Tbsp White vinegar
- 2 cloves Garlic minced
- 1 cup Plain whole milk Greek yogurt
- ⅓ cup Olive oil
- ½ tsp Salt
- ½ tsp Ground black pepper
- ½ tsp Fresh mint chopped
Instructions
- Cook farro according to package.
- Cook chicken according to directions.
- Whisk together dressing ingredients and set aside.
- Divide farro into serving bowls. Top with chicken, olives, tomatoes, cucumbers, and onion.
- Sprinkle farro, chicken, and hummus with about 1 tsp. of Shawarma Seasoning. Serve drizzled with dressing.
