Lemongrass Chicken

Ingredients

Rice Bowl Ingredients:

  • 1 Chicken filet
  • 1 cup Jasmine rice
  • cup Romaine lettuce chopped
  • 1 Mini red bell pepper sliced
  • 1 Tbsp Cilantro for garnish
  • cup Carrot grated
  • cup Red cabbage thinly sliced
  • 1-2 Lime wedges for garnish

Lemongrass Vinaigrette Ingredients:

  • 3 Tbsp Honey
  • Tbsp Lemongrass paste
  • ¼ cup Lime juice
  • 2 cloves Garlic minced
  • 2 Tbsp Rice wine vinegar
  • 1 tsp Fish sauce
  • ¼ cup Olive oil

Instructions

  • Add all vinaigrette ingredients into food processor and pulse until smooth. Taste and adjust seasonings as necessary. Set aside for later.
  • Mix romaine lettuce, red bell pepper, carrots, and red cabbage together. Set aside.
  • Cook rice according to directions on packaging.
  • Cook chicken according to directions on packaging.
  • Layer rice in a bowl. Top with sliced chicken and lettuce mix.
  • Serve vinaigrette on the side or drizzle over top. Garnish with cilantro and lime wedges.
