
Lemongrass Chicken

Ingredients
Rice Bowl Ingredients:
- 1 Chicken filet
- 1 cup Jasmine rice
- ⅓ cup Romaine lettuce chopped
- 1 Mini red bell pepper sliced
- 1 Tbsp Cilantro for garnish
- ⅛ cup Carrot grated
- ⅛ cup Red cabbage thinly sliced
- 1-2 Lime wedges for garnish
Lemongrass Vinaigrette Ingredients:
- 3 Tbsp Honey
- 1½ Tbsp Lemongrass paste
- ¼ cup Lime juice
- 2 cloves Garlic minced
- 2 Tbsp Rice wine vinegar
- 1 tsp Fish sauce
- ¼ cup Olive oil
Instructions
- Add all vinaigrette ingredients into food processor and pulse until smooth. Taste and adjust seasonings as necessary. Set aside for later.
- Mix romaine lettuce, red bell pepper, carrots, and red cabbage together. Set aside.
- Cook rice according to directions on packaging.
- Cook chicken according to directions on packaging.
- Layer rice in a bowl. Top with sliced chicken and lettuce mix.
- Serve vinaigrette on the side or drizzle over top. Garnish with cilantro and lime wedges.
