Ingredients

  • 12 Chicken Strips
  • 20 oz Refrigerated diced potatoes 1 bag
  • 6 Large eggs scrambled
  • ½ cup Pico de gallo prepared
  • 1 Bell pepper any color, julienned
  • 1 Small red onion julienned
  • ½ tsp Ground cumin

Instructions

  • Cook chicken per specifications.
  • Cook potatoes per package instructions.
  • Sautee onions and bell peppers. Season with cumin, salt, and pepper, to taste.
  • Place bed of potatoes in bowl.
  • Top with scrambled eggs, sauteed peppers and onions, chicken strips, and pico de gallo.
