Ingredients
- 3 oz Sliced Grilled Chicken Breast
- ¾ cup Cauliflower cooked and riced
- 1 tsp Oil
- Pinch Salt, pepper, chili powder and cumin
- ¼ cup Onion sautéed
- ¼ cup Red and/or green bell pepper sautéed
- ½ cup Sweet potatoes roasted and diced
- ½ cup Black beans seasoned and warmed
- 1 Egg cooked (scrambled, over easy, sunny side up or poached)
- ½ Avocado sliced
- Garnish with fresh cilantro or scallions
- Drizzle hot sauce and sour cream or serve on the side
Instructions
- Toss the cooked, riced cauliflower with the oil, salt, pepper, chili powder and cumin.
- Add sautéed onion and bell pepper to cauliflower rice.
- In a deep bowl, layer the cauliflower rice, roasted sweet potatoes, black beans and chicken.
- Garnish with cilantro and scallions.
- Serve with hot sauce and sour cream.
