Gluten Free

Easily Expand Your Gluten Free Options

If you’re not serving a variety of gluten free options yet, you’re missing out on a large, passionate customer base! According to the University of Chicago Medicine Celiac Disease Center, 3 million Americans have celiac disease and 18 million have gluten sensitivity. Plus, many more Americans are choosing gluten free options for health benefits. Whether your customers avoid gluten by choice or because of a severe allergy, help them feel at ease by being transparent about how you train staff, store ingredients, and prepare gluten free meals.

Many operations have a few gluten free items, but you can stand out by offering a larger variety that includes exciting, unexpected options. A good rule of thumb is to have two gluten free choices in every ten menu items. Try our ideas below to build up each section of your menu!
Getting Noticed
Your local customers might know you have gluten free options, but what about visitors? When they search for “gluten free restaurants,” do you show up in search results? Make sure it’s clear on your Google business listing and social media pages that you have gluten free options worth trying! You can also get validated through the Gluten-Free Food Service Program to be featured in their advertising and on the "Find Me Gluten Free" app.

Once you draw in customers, help them clearly tell which options are gluten free by using “GF” or no-wheat symbols on your menu. If they have a great dining experience, they’ll spread the word and bring you new customers!
Be Transparent
FSR Magazine has useful ideas on how to put your gluten free processes in writing. All of your employees should thoroughly understand your procedures and be able to build customers' trust by answering questions about your gluten free options.

At Brakebush, we treat gluten as carefully as other allergens. We store gluten free ingredients above gluten-containing ones so that gluten packages can't fall and contaminate gluten free ingredients. We also run gluten free products through our production lines first, after our full 3rd shift of sanitation. Our microbiology lab tests gluten free products, and we verify that they have less than 20 parts per million of gluten.

Pasta
Alternative pastas—like noodles made from zucchini, lentils, and squash—are a great addition to a gluten free-friendly menu, and they’re growing increasingly popular for consumers who are trying to eat more veggies. Whole Foods chose “Produce Meets Pasta” for one of their top 10 Food Trends for 2023. Pasta alternatives are a great way to build your menu because many of them are great served hot or cold. Add this Chicken Zoodle Bowl to your pasta menu or your salad menu!
Sandwiches
Easily make gluten free versions of your favorite sandwiches by keeping gluten free buns on hand. Make deluxe burgers with our Flame-Grilled Chicken Burgers, serve savory breakfast sandwiches using our Chicken Breakfast Sausage Patties, or offer classic chicken sandwiches with our gluten free, grilled chicken filets.
Appetizers
It's important to have a few gluten free choices on your appetizer menu too! Keep gluten free chicken filets on hand that you can use in multiple ways. We sliced some up and used them on Loaded Chicken Nachos and Bibb Lettuce Wraps. For a quick snack option, serve Gluten Free Breaded Chicken Strips.
