BBQ Chicken Quesadillas

Ingredients

  • 1 lb. Diced Chicken
  • 4 Medium/large flour tortillas
  • 3-4 cups Shredded cheeses cheddar, Monterey jack, Mexican blend, etc.
  • 1-2 Tbsp. Vegetable oil
  • Favorite BBQ Sauce
  • Queso dip or cheese sauce
  • French fried onions
  • Guacamole

Instructions

  • Place approximately ¼ of the chicken and cheese onto half of each tortilla.
  • Fold the tortilla in half and place in a preheated nonstick skillet with about 1 Tbsp of oil.
  • Cook over medium heat until browned and flip quesadilla over to brown the other side for 1-2 minutes.
  • Remove from pan and cool slightly. Slice in half.
  • Stack quesadillas and top with BBQ sauce, queso, fried onions, and guacamole.
