
BBQ Chicken Quesadillas

Ingredients
- 1 lb. Diced Chicken
- 4 Medium/large flour tortillas
- 3-4 cups Shredded cheeses cheddar, Monterey jack, Mexican blend, etc.
- 1-2 Tbsp. Vegetable oil
- Favorite BBQ Sauce
- Queso dip or cheese sauce
- French fried onions
- Guacamole
Instructions
- Place approximately ¼ of the chicken and cheese onto half of each tortilla.
- Fold the tortilla in half and place in a preheated nonstick skillet with about 1 Tbsp of oil.
- Cook over medium heat until browned and flip quesadilla over to brown the other side for 1-2 minutes.
- Remove from pan and cool slightly. Slice in half.
- Stack quesadillas and top with BBQ sauce, queso, fried onions, and guacamole.
