Ingredients
- 12 Chicken Strips
- 20 oz Refrigerated diced potatoes 1 bag
- 6 Large eggs scrambled
- ½ cup Pico de gallo prepared
- 1 Bell pepper any color, julienned
- 1 Small red onion julienned
- ½ tsp Ground cumin
Instructions
- Cook chicken per specifications.
- Cook potatoes per package instructions.
- Sautee onions and bell peppers. Season with cumin, salt, and pepper, to taste.
- Place bed of potatoes in bowl.
- Top with scrambled eggs, sauteed peppers and onions, chicken strips, and pico de gallo.
