Ingredients

  • 3 oz Sliced Grilled Chicken Breast
  • ¾ cup Cauliflower cooked and riced
  • 1 tsp Oil
  • Pinch Salt, pepper, chili powder and cumin
  • ¼ cup Onion sautéed
  • ¼ cup Red and/or green bell pepper sautéed
  • ½ cup Sweet potatoes roasted and diced
  • ½ cup Black beans seasoned and warmed
  • 1 Egg cooked (scrambled, over easy, sunny side up or poached)
  • ½ Avocado sliced
  • Garnish with fresh cilantro or scallions
  • Drizzle hot sauce and sour cream or serve on the side

Instructions

  • Toss the cooked, riced cauliflower with the oil, salt, pepper, chili powder and cumin.
  • Add sautéed onion and bell pepper to cauliflower rice.
  • In a deep bowl, layer the cauliflower rice, roasted sweet potatoes, black beans and chicken.
  • Garnish with cilantro and scallions.
  • Serve with hot sauce and sour cream.
