Ingredients

  • 1 cup Leafy green mix
  • ½ cup Brown rice
  • cup Pickled red onions
  • ½ cup Flame seared chicken 5259
  • cup Original hummus or a 2-3 oz scoop
  • cup Red pepper hummus or a 2-3 oz scoop
  • cup Feta Cheese crumbled
  • cup English Cucumber quartered
  • cup Cherry tomatoes sliced
  • cup Crispy chickpeas

Lemon Vinaigrette Ingredients

  • 3 Tbsp Lemon juice fresh
  • 1 clove Garlic Minced
  • 1 Tbsp Dijon mustard
  • Salt and pepper to taste
  • ½ tsp Honey
  • ¼ cup Olive oil
  • ½ tsp Dried oregano
  • 3 Tbsp Red wine vinegar
  • ¼ cup Tahini
  • 1 cup Tzatziki

Instructions

  • Cook chicken according to directions.
  • Whisk together tahini and tzatziki to make sauce. Taste and adjust as necessary.
  • Layer all ingredients in bowl, topping with scoops of hummus, tahini tzatziki, and crispy chickpeas.
  • To make vinaigrette, whisk together all ingredients except for olive oil. Slowly add olive oil while whisking until the dressing is emulsified. Taste and adjust seasoning as desired.
