Chicken Samosa Filling

Ingredients

  • 1 lb Diced chicken breast cooked per specifications
  • 1 Medium yellow onion finely chopped
  • 2 Tbsp Ghee or clarified butter
  • 1 tsp Ginger paste
  • 1 tsp Garlic paste
  • 2 tsp Curry powder
  • 1 tsp Coriander seed ground
  • 1 tsp Cardamom ground
  • 1 Tbsp Cilantro minced

Instructions

  • Add cooked chicken to food processor and pulse until coarsely ground.
  • In skillet, heat ghee over medium heat. Add onion and cook until just beginning to soften, 3-5 minutes. Add ginger and garlic pastes. Cook for 1 minute.
  • Add ground chicken and cook for 2-3 minutes, until warmed through.
  • Add all dry spices to skillet and mix until thoroughly combined. Cook for an additional minute to toast spices.
  • Remove from heat and add cilantro.
  • Cool mixture to room temperature (or refrigerate) until ready to make samosas.
