
Chicken Samosa Filling

Ingredients
- 1 lb Diced chicken breast cooked per specifications
- 1 Medium yellow onion finely chopped
- 2 Tbsp Ghee or clarified butter
- 1 tsp Ginger paste
- 1 tsp Garlic paste
- 2 tsp Curry powder
- 1 tsp Coriander seed ground
- 1 tsp Cardamom ground
- 1 Tbsp Cilantro minced
Instructions
- Add cooked chicken to food processor and pulse until coarsely ground.
- In skillet, heat ghee over medium heat. Add onion and cook until just beginning to soften, 3-5 minutes. Add ginger and garlic pastes. Cook for 1 minute.
- Add ground chicken and cook for 2-3 minutes, until warmed through.
- Add all dry spices to skillet and mix until thoroughly combined. Cook for an additional minute to toast spices.
- Remove from heat and add cilantro.
- Cool mixture to room temperature (or refrigerate) until ready to make samosas.
