Chicken Shawarma Farro Bowl

Ingredients

  • 1 cup Sliced chicken
  • 1 cup Farro cooked
  • ¼ cup Kalamata olives drained and halved
  • ¼ cup Cherry tomatoes halved
  • ¼ cup English cucumber seeded and chopped
  • ¼ cup Small red onion thinly sliced
  • ¼ cup Hummus

Shawarma Seasoning

  • 2 Tbsp Ground cumin
  • 2 tsp Smoked paprika
  • tsp Ground turmeric
  • 1 tsp Coriander
  • 1 tsp Garlic powder
  • ½ tsp Cinnamon
  • ½ tsp Ground ginger
  • tsp Cayenne pepper

Dressing

  • 2 Tbsp Lemon juice
  • 1 Tbsp White vinegar
  • 2 cloves Garlic minced
  • 1 cup Plain whole milk Greek yogurt
  • cup Olive oil
  • ½ tsp Salt
  • ½ tsp Ground black pepper
  • ½ tsp Fresh mint chopped

Instructions

  • Cook farro according to package.
  • Cook chicken according to directions.
  • Whisk together dressing ingredients and set aside.
  • Divide farro into serving bowls. Top with chicken, olives, tomatoes, cucumbers, and onion.
  • Sprinkle farro, chicken, and hummus with about 1 tsp. of Shawarma Seasoning. Serve drizzled with dressing.
