Chopped Asian Chicken Salad

Ingredients

  • 3 cups Diced Chicken
  • 6 cups Mixed greens napa cabbage, purple cabbage, Romaine, baby spinach, brussels sprouts, or broccoli slaw
  • 2 Large carrots
  • 1 cup Sugar snap peas sliced
  • 1 cup Canned mandarin orange segments drained
  • ¾ cup Red bell pepper diced
  • 1 bunch Scallions diced
  • ½ cup Silvered almonds blanched

Dressing

  • ¼ cup Vegetable oil
  • 2 Tbsp. Toasted sesame oil
  • 3 Tbsp. Honey
  • 2 Tbsp. Rice wine vinegar
  • 1 Tbsp. Freshly grated ginger
  • 1 clove Garlic minced
  • 1 Tbsp. Low sodium soy sauce or coconut aminos
  • 2 tsp. Sriracha chili sauce optional

Instructions

  • Add all dressing ingredients in a bowl and whisk until combined.
  • Combine all salad ingredients in a bowl and toss. Dress salad with desired amount of vinaigrette.
