
Chopped Asian Chicken Salad

Ingredients
- 3 cups Diced Chicken
- 6 cups Mixed greens napa cabbage, purple cabbage, Romaine, baby spinach, brussels sprouts, or broccoli slaw
- 2 Large carrots
- 1 cup Sugar snap peas sliced
- 1 cup Canned mandarin orange segments drained
- ¾ cup Red bell pepper diced
- 1 bunch Scallions diced
- ½ cup Silvered almonds blanched
Dressing
- ¼ cup Vegetable oil
- 2 Tbsp. Toasted sesame oil
- 3 Tbsp. Honey
- 2 Tbsp. Rice wine vinegar
- 1 Tbsp. Freshly grated ginger
- 1 clove Garlic minced
- 1 Tbsp. Low sodium soy sauce or coconut aminos
- 2 tsp. Sriracha chili sauce optional
Instructions
- Add all dressing ingredients in a bowl and whisk until combined.
- Combine all salad ingredients in a bowl and toss. Dress salad with desired amount of vinaigrette.
