
Citrus Chicken Bowl

Ingredients
- 1 Unbreaded chicken filet sliced
- 2 cups Rice cooked
- 2 Tbsp Red onion diced
- 2 Tbsp Avocado diced
- 2 Tbsp Black beans
- ¼ Blood orange cut into pieces
- ¼ Navel orange cut into pieces
- ¼ Grapefruit cut into pieces
- ½ cup Garlic lime vinaigrette (recipe below)
Garlic Lime Vinaigrette:
- ⅓ cup Olive oil
- 1 Lime zested
- ¼ cup Lime juice 1-2 limes
- 1 clove Garlic minced
- 2 Tbsp Honey
- 2 Tbsp Heavy cream
- Salt and pepper to taste
Instructions
- Cook chicken according to directions and then slice into 1/4" pieces.
- Mix the oranges, grapefruit, and avocado.
- Top rice with citrus salad, onion, beans, and sauce.
Vinaigrette Instructions:
- Add all ingredients to a bowl and whisk until well combined. Store in the fridge until ready to be used. Top with chopped cilantro, if desired.
