
Creamy Tomato and Mushroom Chicken Pasta

Ingredients
- ½ lb. Diced Chicken
- 8 oz Penne pasta
- 2 Tbsp Olive oil divided
- ½ Small white onion small dice
- 1 lb Baby Bella mushrooms thinly sliced
- 2 cloves Garlic minced
- 1 cup Cherry tomatoes
- 2 Tbsp. Italian seasoning
- 2 Tbsp Tomato paste
- 1 cup Heavy cream
- ½ cup Chicken broth
- ½ cup Tomato sauce
- 2 oz Cream cheese
- ¾ cup Parmesan grated
- 2 cups Fresh spinach
Instructions
- Cook pasta according to package.
- In a large skillet over medium heat, heat 1 Tbsp of the olive oil. Add the chicken, stirring occasionally until heated through. Remove and set aside.
- Heat the remaining olive oil and add the onions and mushrooms. Cook until softened, about 5 minutes. Add garlic and cook for an additional minute.
- Add cherry tomatoes and Italian seasoning. Cook until tomatoes begin to soften, about 4 minutes.
- Stir in the tomato paste and cook for 30 seconds. Stir in the broth, heavy cream, and tomato sauce. Bring to a simmer and let simmer for about 5 minutes.
- Add cream cheese and Parmesan cheese and heat until melted.
- Add spinach and cook until wilted and bright green, about 2 minutes.
- Add chicken and pasta back to the skillet and toss before serving. Top with additional Parmesan cheese.
