Creamy Tomato and Mushroom Chicken Pasta

Ingredients

  • ½ lb. Diced Chicken
  • 8 oz Penne pasta
  • 2 Tbsp Olive oil divided
  • ½ Small white onion small dice
  • 1 lb Baby Bella mushrooms thinly sliced
  • 2 cloves Garlic minced
  • 1 cup Cherry tomatoes
  • 2 Tbsp. Italian seasoning
  • 2 Tbsp Tomato paste
  • 1 cup Heavy cream
  • ½ cup Chicken broth
  • ½ cup Tomato sauce
  • 2 oz Cream cheese
  • ¾ cup Parmesan grated
  • 2 cups Fresh spinach

Instructions

  • Cook pasta according to package.
  • In a large skillet over medium heat, heat 1 Tbsp of the olive oil. Add the chicken, stirring occasionally until heated through. Remove and set aside.
  • Heat the remaining olive oil and add the onions and mushrooms. Cook until softened, about 5 minutes. Add garlic and cook for an additional minute.
  • Add cherry tomatoes and Italian seasoning. Cook until tomatoes begin to soften, about 4 minutes.
  • Stir in the tomato paste and cook for 30 seconds. Stir in the broth, heavy cream, and tomato sauce. Bring to a simmer and let simmer for about 5 minutes.
  • Add cream cheese and Parmesan cheese and heat until melted.
  • Add spinach and cook until wilted and bright green, about 2 minutes.
  • Add chicken and pasta back to the skillet and toss before serving. Top with additional Parmesan cheese.
