
Elote Cornbread Waffles & Fried Chicken

Ingredients
- Breaded chicken wings
- 6 Cornbread waffles recipe below
- 1 cup Corn kernels
- ½ cup Cotija cheese grated
- Fresh cilantro chopped, for garnish
- Hot honey for topping (optional)
Cornbread Waffle Ingredients
- 1 cup Buttermilk
- ½ cup Butter melted
- 6 Tbsp Sugar
- 2 Large eggs
- 1 cup All purpose flour
- 1½ cup Yellow cornmeal
- 1½ tsp Baking powder
- 1 tsp Baking soda
- ¼ tsp Kosher salt
Instructions
- Cook chicken wings per specifications.
- In a mixing bowl, whisk together buttermilk, butter, sugar, and eggs.
- In a separate bowl, combine flour, cornmeal, baking powder, baking soda, and salt.
- Pour wet mixture over dry ingredients and stir using a rubber spatula until moist.
- Spray waffle grates with nonstick cooking spray.
- Spoon about ¼ cup of batter into waffle iron.
- Cook until golden brown and cooked through, about 2-3 minutes per waffle.
- Top waffles with chicken wings, corn, cotija, cilantro, and hot honey (if desired).
