Honey Mustard Chicken Skillet

Ingredients

  • 1 Grilled chicken cutlet
  • 1 Tbsp Butter
  • 1 cup Brussels sprouts quartered
  • 1 Medium sweet potato diced
  • 1 Medium yellow onion diced
  • 1 Apple peeled and diced
  • 1 Tbsp honey
  • 1 tsp Thyme
  • 1 tsp rosemary
  • 1 tsp garlic powder
  • ½ tsp Salt
  • ¼ cup Chicken broth

Hot Honey Dijon Mustard Ingredients

  • ¼ cup Mayo
  • 3 Tbsp Dijon mustard
  • 3 Tbsp Hot honey
  • 1 Tbsp Lemon juice
  • ½ tsp Cayenne
  • ½ tsp Garlic powder
  • ½ tsp Smoked paprika

Instructions

  • Whisk together Hot Honey Dijon Mustard ingredients, adding seasoning as needed.
  • Prepare chicken according to directions.
  • Melt butter in a skillet over medium heat. Add brussels sprouts, sweet potatoes, and yellow onion. Cook until onions begin to soften.
  • Add apples, honey, thyme, rosemary, garlic powder, and salt. Cook for another 1-2 minutes before adding broth.
  • Continue to cook and stir until broth is evaporated. Check to see if vegetables are tender enough. Add additional broth and continue to cook, if needed.
  • Layer vegetable mixture in a small skillet and top with chicken. Serve with hot honey dijon mustard on top or on the side.
