
Honey Mustard Chicken Skillet

Ingredients
- 1 Grilled chicken cutlet
- 1 Tbsp Butter
- 1 cup Brussels sprouts quartered
- 1 Medium sweet potato diced
- 1 Medium yellow onion diced
- 1 Apple peeled and diced
- 1 Tbsp honey
- 1 tsp Thyme
- 1 tsp rosemary
- 1 tsp garlic powder
- ½ tsp Salt
- ¼ cup Chicken broth
Hot Honey Dijon Mustard Ingredients
- ¼ cup Mayo
- 3 Tbsp Dijon mustard
- 3 Tbsp Hot honey
- 1 Tbsp Lemon juice
- ½ tsp Cayenne
- ½ tsp Garlic powder
- ½ tsp Smoked paprika
Instructions
- Whisk together Hot Honey Dijon Mustard ingredients, adding seasoning as needed.
- Prepare chicken according to directions.
- Melt butter in a skillet over medium heat. Add brussels sprouts, sweet potatoes, and yellow onion. Cook until onions begin to soften.
- Add apples, honey, thyme, rosemary, garlic powder, and salt. Cook for another 1-2 minutes before adding broth.
- Continue to cook and stir until broth is evaporated. Check to see if vegetables are tender enough. Add additional broth and continue to cook, if needed.
- Layer vegetable mixture in a small skillet and top with chicken. Serve with hot honey dijon mustard on top or on the side.
