Jerk Chicken with Mango Salsa

Ingredients

  • 1 serving Chicken breast fillets
  • 1 cup Rice cooked

Jerk Seasoning

  • 1 tbsp Onion powder
  • 1 tbsp Garlic powder
  • 2 tsp Cayenne pepper
  • 2 tsp Kosher salt optional
  • 2 tsp Ground black pepper
  • 1 tsp Ground thyme
  • 2 tsp Sugar
  • 1 tsp Ground allspice
  • 1 tsp Paprika
  • ½ tsp Ground cinnamon
  • ½ tsp Ground nutmeg
  • ½ tsp Ground clove
  • ¼ tsp Ground cumin

Mango Salsa

  • 3 Ripe mangos diced
  • 1 Medium red bell pepper chopped
  • ½ cup Chopped red onion
  • ¼ cup Fresh cilantro chopped
  • 1 Jalapeño seeded and minced
  • ¼ cup Fresh lime juice
  • Salt to taste

Instructions

  • Combine ingredients for the Mango Salsa, set aside for 10-15 minutes.
  • Combine ingredients for the jerk seasoning.
  • Evenly rub the jerk seasoning into chicken breast fillets.
  • In a skillet or griddle, heat oil. Add seasoned chicken and heat to specifications.
  • Serve jerk chicken with mango salsa atop prepared rice.
