
Jerk Chicken with Mango Salsa
Ingredients
- 1 serving Chicken breast fillets
- 1 cup Rice cooked
Jerk Seasoning
- 1 tbsp Onion powder
- 1 tbsp Garlic powder
- 2 tsp Cayenne pepper
- 2 tsp Kosher salt optional
- 2 tsp Ground black pepper
- 1 tsp Ground thyme
- 2 tsp Sugar
- 1 tsp Ground allspice
- 1 tsp Paprika
- ½ tsp Ground cinnamon
- ½ tsp Ground nutmeg
- ½ tsp Ground clove
- ¼ tsp Ground cumin
Mango Salsa
- 3 Ripe mangos diced
- 1 Medium red bell pepper chopped
- ½ cup Chopped red onion
- ¼ cup Fresh cilantro chopped
- 1 Jalapeño seeded and minced
- ¼ cup Fresh lime juice
- Salt to taste
Instructions
- Combine ingredients for the Mango Salsa, set aside for 10-15 minutes.
- Combine ingredients for the jerk seasoning.
- Evenly rub the jerk seasoning into chicken breast fillets.
- In a skillet or griddle, heat oil. Add seasoned chicken and heat to specifications.
- Serve jerk chicken with mango salsa atop prepared rice.
