
Mediterranean Chicken Bowl

Ingredients
- 3 oz Chicken strips
- 1 cup Quinoa cooked
- ¼ cup Cucumbers chopped
- ¼ cup Olives chopped
- ¼ cup Feta cheese crumbled
- ¼ cup Tomatoes diced
- 2 Tbsp Red onion chopped
- 2 tsp Parsley chopped
- 2 Tbsp Hummus
- ½ Tbsp Olive oil
- Salt and pepper to taste
- Lemon or lime wedges
Instructions
- In a deep bowl, layer quinoa and chicken.
- Top with cucumber, olives, feta, tomato, onion and parsley.
- Spoon the dollop of hummus on top.
- Drizzle with olive oil and season with cracked black pepper and salt.
- Serve with lemon or lime wedge.
