
Miso Ranch Chopped Chicken Salad

Ingredients
- 2-3 Chicken tenders
- 2-3 cups Spring mix
- 1/3 cup Grapefruit peeled and cut
- 1/3 cup Jicama cubed
- 1 Tbsp Pepitas
- 2-3 Tbsp Blue cheese
- 2 Tbsp Dried cherries
- 2 Tbsp Dried apricots chopped
Miso Ranch Ingredients
- ½ cup Ranch
- 1 Tbsp White miso
- 3 tsp Lemon juice
- 2 tsp Sriracha
Instructions
- Cook chicken according to directions on packaging. Chop up and set aside.
- Make miso ranch by whisking together all ingredients until smooth.
- Top your greens with grapefruit, jicama, dried cherries, and dried apricots.
- Add chicken before adding blue cheese and pepitas.
- Serve with miso ranch.
