Miso Ranch Chopped Chicken Salad

Ingredients

  • 2-3 Chicken tenders
  • 2-3 cups Spring mix
  • 1/3 cup Grapefruit peeled and cut
  • 1/3 cup Jicama cubed
  • 1 Tbsp Pepitas
  • 2-3 Tbsp Blue cheese
  • 2 Tbsp Dried cherries
  • 2 Tbsp Dried apricots chopped

Miso Ranch Ingredients

  • ½ cup Ranch
  • 1 Tbsp White miso
  • 3 tsp Lemon juice
  • 2 tsp Sriracha

Instructions

  • Cook chicken according to directions on packaging. Chop up and set aside.
  • Make miso ranch by whisking together all ingredients until smooth.
  • Top your greens with grapefruit, jicama, dried cherries, and dried apricots.
  • Add chicken before adding blue cheese and pepitas.
  • Serve with miso ranch.
