
Pickle de Gallo Tacos

Ingredients
- 1 lb Boneless Chicken Wings
- 6 Medium tortillas
- ½ cup Hot sauce
- ¾ cup Crema We recommend a garlicky Ranch-infused crema.
- 1 cup Pickle de Gallo (recipe below)
Pickle de Gallo
- 1 seedless cucumber finely diced
- 1 cup dill pickles finely diced
- 1/2 cup red onion finely diced
- 1/2 red bell pepper finely diced
- 1 clove garlic minced
- 1/2 teaspoon kosher salt
- 1/2 cup pickle brine
- 1 tsp fresh jalapeno minced
Instructions
- Cook boneless wings per specifications and then toss in hot sauce.
- Lightly grill tortillas to soften.
- Place boneless wings on tortillas, and drizzle with crema.
- Top with pickle de gallo.
Pickle de Gallo Instructions
- In a mixing bowl, toss together cucumbers, pickles, onions, bell peppers, garlic, jalapeno and salt.
- Drizzle the pickle brine over the mixture and toss again.
- Cover tightly and refrigerate for an hour before using.
