Pulled BBQ Chicken Stuffed Cornbread Muffins

Ingredients

  • 2 cups Pulled and Shredded chicken
  • ½ cup BBQ sauce
  • 1 box Corn Muffin Mix
  • 1 box Yellow Cake Mix
  • 2 Large eggs
  • cup Milk
  • ½ cup Water
  • Candied jalapenos optional

Instructions

  • Preheat oven to 375°F.
  • In a mixing bowl, combine chicken and BBQ sauce.
  • In a separate mixing bowl, combine muffin mix, cake mix, eggs, milk, and water. Stir until combined, but do not overmix.
  • Spray jumbo muffin tin with cooking spray. Fill each muffin cup with batter until ¼ full. Add ~1/2 cup of sauced chicken to each cup. Top with remaining batter until cups are ¾ full.
  • If desired, top with a few slices of candied jalapeno.
  • Bake 15-20 minutes, until golden brown and a toothpick inserted into muffins comes out clean.
