
Pulled BBQ Chicken Stuffed Cornbread Muffins

Ingredients
- 2 cups Pulled and Shredded chicken
- ½ cup BBQ sauce
- 1 box Corn Muffin Mix
- 1 box Yellow Cake Mix
- 2 Large eggs
- ⅓ cup Milk
- ½ cup Water
- Candied jalapenos optional
Instructions
- Preheat oven to 375°F.
- In a mixing bowl, combine chicken and BBQ sauce.
- In a separate mixing bowl, combine muffin mix, cake mix, eggs, milk, and water. Stir until combined, but do not overmix.
- Spray jumbo muffin tin with cooking spray. Fill each muffin cup with batter until ¼ full. Add ~1/2 cup of sauced chicken to each cup. Top with remaining batter until cups are ¾ full.
- If desired, top with a few slices of candied jalapeno.
- Bake 15-20 minutes, until golden brown and a toothpick inserted into muffins comes out clean.
