Citrus Chicken Bowl

Ingredients

  • 1 Unbreaded chicken filet sliced
  • 2 cups Rice cooked
  • 2 Tbsp Red onion diced
  • 2 Tbsp Avocado diced
  • 2 Tbsp Black beans
  • ¼ Blood orange cut into pieces
  • ¼ Navel orange cut into pieces
  • ¼ Grapefruit cut into pieces
  • ½ cup Garlic lime vinaigrette (recipe below)

Garlic Lime Vinaigrette:

  • cup Olive oil
  • 1 Lime zested
  • ¼ cup Lime juice 1-2 limes
  • 1 clove Garlic minced
  • 2 Tbsp Honey
  • 2 Tbsp Heavy cream
  • Salt and pepper to taste

Instructions

  • Cook chicken according to directions and then slice into 1/4" pieces.
  • Mix the oranges, grapefruit, and avocado.
  • Top rice with citrus salad, onion, beans, and sauce.

Vinaigrette Instructions:

  • Add all ingredients to a bowl and whisk until well combined. Store in the fridge until ready to be used. Top with chopped cilantro, if desired.
