Elote Cornbread Waffles & Fried Chicken

Ingredients

  • Breaded chicken wings
  • 6 Cornbread waffles recipe below
  • 1 cup Corn kernels
  • ½ cup Cotija cheese grated
  • Fresh cilantro chopped, for garnish
  • Hot honey for topping (optional)

Cornbread Waffle Ingredients

  • 1 cup Buttermilk
  • ½ cup Butter melted
  • 6 Tbsp Sugar
  • 2 Large eggs
  • 1 cup All purpose flour
  • cup Yellow cornmeal
  • tsp Baking powder
  • 1 tsp Baking soda
  • ¼ tsp Kosher salt

Instructions

  • Cook chicken wings per specifications.
  • In a mixing bowl, whisk together buttermilk, butter, sugar, and eggs.
  • In a separate bowl, combine flour, cornmeal, baking powder, baking soda, and salt.
  • Pour wet mixture over dry ingredients and stir using a rubber spatula until moist.
  • Spray waffle grates with nonstick cooking spray.
  • Spoon about ¼ cup of batter into waffle iron.
  • Cook until golden brown and cooked through, about 2-3 minutes per waffle.
  • Top waffles with chicken wings, corn, cotija, cilantro, and hot honey (if desired).
