Mediterranean Chicken Bowl

Ingredients

  • 3 oz Chicken strips
  • 1 cup Quinoa cooked
  • ¼ cup Cucumbers chopped
  • ¼ cup Olives chopped
  • ¼ cup Feta cheese crumbled
  • ¼ cup Tomatoes diced
  • 2 Tbsp Red onion chopped
  • 2 tsp Parsley chopped
  • 2 Tbsp Hummus
  • ½ Tbsp Olive oil
  • Salt and pepper to taste
  • Lemon or lime wedges

Instructions

  • In a deep bowl, layer quinoa and chicken.
  • Top with cucumber, olives, feta, tomato, onion and parsley.
  • Spoon the dollop of hummus on top.
  • Drizzle with olive oil and season with cracked black pepper and salt.
  • Serve with lemon or lime wedge.
